1. Italian Pasta Salad

Ingredients:

  • For the pasta salad:
    • 1 lb rotini pasta, cooked and cooled
    • 2 cups cherry tomatoes, halved
    • 2 cups diced salami
    • 1 cup black olives, sliced
    • 1 cup baby bell peppers, thinly sliced
    • 1/2 cup red onion, diced
    • 1/2 cup parmesan cheese, grated
    • 8 oz mozzarella pearls
    • 1/2 tsp salt
    • 1/4 cup fresh parsley, chopped
    • 1/2 cup fresh basil, chopped
    • For the dressing:
      • 1 cup extra virgin olive oil
      • 1/3 cup red wine vinegar
      • 1/4 cup pesto
      • 1 tsp salt
      • 1/2 tsp black pepper, ground
      • 1 garlic clove, grated

Directions:

  1. To prepare the pasta salad, combine all prepared ingredients in a large bowl.
  2. For the dressing, combine all of the ingredients, except the olive oil. Then, slowly pour the olive oil, whisking constantly until well incorporated.
  3. Pour the dressing over the pasta salad and mix to combine.

  • 1 lemon, juiced
  • 2 tsp kosher salt
  • 1 tsp black pepper, ground

Directions:

  1. To make the dressing, whisk together the mayonnaise, vinegar, and lemon juice. Add salt and black pepper.
  2. Mix the dressing with the coleslaw mix. Add in dill and parsley, and toss again to combine.

  • 6 tbsp salted butter, softened
  • 2 tbsp chives, chopped
  • 1/4 tsp paprika, ground
  • 1/4 tsp black pepper, ground

  1. To grill the corn, pre-heat a grill pan or your outdoor grill to about 500 degrees.
  2. Remove the husk from the corn cobs, leaving only the two innermost layers. Peel those two layers to expose the kernels without removing them completely.
  3. Remove all the silk threads from the corn. Then, take the reserved pieces of husk and place it back over the kernels. Leave some gaps to allow the heat to penetrate.
  4. Grill the corn for about 5 minutes, making sure to turn each one a quarter of the way before allowing it to cook for another 5 minutes. Repeat this until all sides are grilled, then remove the corn from the heat.

Ingredients:

  • 1 bunch of asparagus, washed and dried
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, ground
  • 1 lemon, halved

  1. Pre-heat the grill to about 450 degrees.
  2. To prepare the asparagus, remove and throw away a chunk measuring about 1 inch from the base of the stalks.
