  • ½ tsp lime zest
  • 2 tbsp and 2 tsp lime juice, divided
  • 1 jalapeño, thinly sliced
  • ½ small red onion, thinly sliced
  • 2 rotisserie chicken breasts, shredded
  • ¾ cup barbecue sauce
  • 1 6-oz bag of thick sweet potato chips
  • 6 oz cheddar cheese, coarsely grated
  • ¼ cup sour cream
  • ½ cup cilantro leaves
  • Kosher salt

Directions:

  1. Heat the oven to 400°F.
  2. Line a rimmed baking sheet using parchment paper.
  3. Prepare a small bowl. Whisk honey, 2 tbsp of lime juice, and ¼ tsp of salt to dissolve.
  4. Afterward, add in jalapeño and onions. Toss to combine them. Then, let them sit while tossing them occasionally until you need to use them.
  5. Prepare a medium bowl and toss the shredded chicken inside. Afterward, coat it with barbecue sauce.
  6. Organize and place one layer of sweet potatoes on the baking sheet. Sprinkle 1 cup of cheese in them. Then, sprinkle in the chicken and add the remaining ½ cup of cheese.
